Pumpkin Protein Brownie Bites

A brownie so yummy you can't wait to indulge.


But wait, can it actually support your eat better goals too?


Yep!


These delicious and nutritious Pumpkin Protein Brownie Bites, are loaded with the goodness of pumpkin, protein and hearty grains. Plus, they taste great too!


Now that's what I call a win/win!


Pro tip: they make a tasty pre or post workout snack with a balance balance of protein, carbs and fats, but of course you can enjoy them any old time the craving strikes!


Pumpkin Protein Brownies

Ingredients

  • 2 scoops vanilla protein powder

  • 1 C pumpkin puree

  • 1/2 C creamy peanut butter (or almond butter)

  • 1 C oats (can sub with gluten free)

  • 1 C whole wheat flour (or sub with gluten free)

  • 2 eggs

  • 1/2 C honey

  • 1 tsp vanilla

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • 1/2 tsp nutmeg

  • 1/8 tsp cloves

  • 1/3 C chocolate chips (if using minis reduce to 1/4 C)

Directions

  1. Preheat oven to 350 degrees.

  2. In a medium size bowl combine pumpkin, peanut butter, eggs, honey, vanilla and protein powder. Beat with a hand mixer until well blended.

  3. Stir in spices and oats, add flour last and mix until well combined.

  4. Spray a 9x12 baking dish with non stick cooking spray.

  5. Pour batter into dish and spread evenly, sprinkle chocolate chips on top (or you can mix them into the batter before spreading into the dish!)

  6. Bake 15-20 minutes (until toothpick comes out clean).
