Peanut Butter & Banana Oatmeal Bars

This tasty recipe is perfect for fueling busy mornings or a midday energizing boost snack: Peanut Butter & Banana Oatmeal Bars!


Who doesn't love a quick and easy breakfast bar you can eat on-the-go that not only tastes great, but will keep you going strong all morning long?


Packed with protein, complex carbs and healthy fats, it's a simple way to support your eat better goals too! But why limit them to the morning? Enjoy them as a midday pick-me-up or after dinner "treat" too!

Peanut Butter Oatmeal Bars

Ingredients

  • 2 bananas, mashed

  • 1/2 C creamy peanut butter

  • 1 C oats (can use gluten free)

  • 1/3 C chopped walnuts

  • 1/4 C honey

  • 3 Tbsp. unsweetened vanilla almond milk (or milk of choice)

  • 1 - 1.5 tsp. cinnamon (I like to add a bit more...I love my cinnamon!)

Directions

  1. Preheat oven to 375 degrees

  2. Spray an 8x8 baking pan with non stick cooking oil (I like to use my mini loaf baking tray, you can also use a regular muffin tray minus the paper liners)

  3. In a medium size bowl mix all ingredients together with a fork until well blended

  4. Pour mixture into baking pan or spoon into a mini loaf or muffin tray

  5. Bake for 15 - 20 minutes (or until edges are golden brown and toothpick comes out clean)
