'Tis the season for sweet delights and our senses to be tempted by the wonderful aroma of freshly baked goods!
The scents of cinnamon, nutmeg, ginger and more fill the air... there's nothing quite like walking into a house smelling the scents of festive treats to put you in the holiday spirit.
Add a bit of holiday cheer and entice the senses with this simple Holiday Gingerbread!
A delicious seasonal bread to share with family and friends, pair with your morning coffee, or enjoy as an after dinner treat. So moist and full of rich flavor you won't even miss what's missing. Cheers to a healthy and happy holiday!
4 large bananas, mashed
1 & 1/2 tsp. vanilla
1/3 C unsweetened vanilla almond milk (or milk of choice)
1/3 C honey
1/4 C molasses
1 & 1/2 tsp. vinegar
1 tsp. baking soda
3/4 tsp. baking powder
2 & 1/2 tsp. cinnamon
2 tsp. ground ginger
1/2 tsp. ground cloves
1/4 tsp. nutmeg
2 C whole wheat flour (or gluten free sub)
Optional add ins: walnuts, raisins, dried cranberries
Preheat oven to 350 degrees.
Spray 9x5 loaf pan with nonstick cooking spray (or use coconut oil to lightly grease).
Whisk banana, vanilla, milk, honey, molasses, and vinegar in a medium size mixing bowl and set aside.
In a large bowl combine the baking soda, baking powder, cinnamon, ginger, cloves, nutmeg and flour.
Slowly stir wet ingredients into the large bowl of dry ingredients, stir until well blended.
Pour mixture into loaf pan and place in the oven to bake for 35 minutes (as much as you may want to DO NOT open the oven while baking as it will compromise the bread's ability to cook thoroughly!)
Turn off the heat and let the loaf sit in the oven an additional 10 minutes (still no peeking!!)
Remove pan from oven and allow bread to cool fully before removing from the pan.
