Chocolate Peanut Butter Oatmeal Bars

Yes, Chocolate and Peanut butter, it's a winning combination! Add some hearty oats and you have yourself a "clean eat treat" in a tasty little bar! That is what these Chocolate Peanut Butter Oatmeal Bars are all about! A tasty oatmeal bar that seems too indulgent to be "healthy," but it's not! And bonus - because this recipe yields a big batch, you can share it with friends and family or just freeze 1/2 the batch to pull out and enjoy when you want them!

Ingredients
1 C creamy natural peanut butter (or nut butter sub)
2 large ripe bananas, mashed
1 egg
1/3 C honey
1/4 C coconut oil, melted
1 tsp. baking powder
3 1/2 C rolled oats (can sub with gluten free)
1/2 C mini chocolate chips (or carob chips)

Directions
Preheat oven to 350 degrees.
Mash bananas and set aside in a large mixing bowl.
In a small bowl melt 1 C peanut butter with 1/4 C coconut oil in microwave for approximately 30 seconds, stir well and add to mashed bananas.
Add egg, baking powder and honey, blend on low with a hand mixer.
Stir oats and chocolate chips into batter by hand.
Spread batter into a lightly greased 9x13 baking dish (I like to spray a bit of coconut oil to coat).
Bake for 20-25 minutes (until toothpick come out clean), remove from oven and cool for 10 minutes before slicing.
