Chocolate Mint Protein Brownies

The deliciousness of chocolate and the goodness of protein have come together to satisfy your sweet tooth and support your health and fitness goals in this rich and creamy way. Enter the Chocolate Mint Protein Brownie! 


A level up on the traditional brownie, these protein brownies make a great pre or post workout snack, a fun anytime treat, and a tasty dessert to share with friends and family.


Many of my clients ask me how they can whip up healthier versions of their favorite fun treats so they can enjoy them more often without sacrificing flavor or sabotaging their goals. And these brownies do not disappoint! Plus the mint gives them a fun flavor twist that is especially tasty paired a scoop of vanilla ice cream too.



Ingredients

  • 3 Tbsp. chocolate protein powder

  • 2 large overripe bananas, mashed

  • 2/3 C creamy nut peanut butter - I prefer creamy natural peanut butter (or sub with nut alternative)

  • 1/3 C unsweetened cocoa powder

  • 1 tsp. vanilla

  • 1/2 tsp. pure peppermint

  • 1/2 tsp. cinnamon

  • 1/4 C honey

  • Optional add ins: crushed nuts, diced dried cranberries, figs, or apricots, mini chocolate chips

Chocolate Mint Brownies

Directions

  1. Preheat oven to 325 degrees.

  2. Line an 8x8 baking dish with parchment paper (to ensure ease of removing brownies).

  3. Warm nut butter of choice approximately 30 seconds in a microwave safe bowl or until it's smooth and creamy and easy to stir.

  4. In a medium size mixing bowl, combine mashed bananas, cocoa, protein powder, nut butter, vanilla, peppermint and honey - stir well with a large spoon.

  5. Once mixture is well combined, pour batter in to an 8x8 baking dish, spread evenly.

  6. Bake brownie mixture for 20-25 minutes and then remove to cool 5-10 minutes.

  7. Cover dish with aluminum foil and place in the fridge to further cool (brownies will become firmer) - store in fridge or freezer for several weeks!
