The deliciousness of chocolate and the goodness of protein have come together to reward your healthy lifestyle endeavors in this rich and creamy Chocolate Mint Protein Brownie! Pre workout, post workout, an on the go snack or mid day pick me up, anytime is a good time for this tasty brownie! Indulging your sweet tooth never tasted so good!
3 Tbsp. chocolate protein powder
2 large overripe bananas, mashed
2/3 C creamy nut peanut butter - I prefer creamy natural peanut butter (or sub with nut alternative)
1/3 C unsweetened cocoa powder
1 tsp. vanilla
1/2 tsp. pure peppermint
1/2 tsp. cinnamon
1/4 C honey
Optional add ins: crushed nuts, diced dried cranberries, figs, or apricots, mini chocolate chips
Preheat oven to 325 degrees.
Line an 8x8 baking dish with parchment paper (to ensure ease of removing brownies).
Warm nut butter of choice approximately 30 seconds in a microwave safe bowl or until it's smooth and creamy and easy to stir.
In a medium size mixing bowl, combine mashed bananas, cocoa, protein powder, nut butter, vanilla, peppermint and honey - stir well with a large spoon.
Once mixture is well combined, pour batter in to an 8x8 baking dish, spread evenly.
Bake brownie mixture for 20-25 minutes and then remove to cool 5-10 minutes.
Cover dish with aluminum foil and place in the fridge to further cool (brownies will become firmer) - store in fridge or freezer for several weeks!
