Chocolate Banana Muffins

Do you love chocolate? Then you are in for a real treat!


This recipe is a chocolate lovers dream, so deliciously rich and satisfying it's sure to soothe even the toughest sweet tooth craving: Chocolate Banana Muffins!


Plus we've leveled up a few of the ingredients with few fun swaps to help you better support your eat better goals without sacrificing any of the delicious flavor!

Double Chocolate Muffins

Ingredients

  • 3 bananas, mashed

  • 1/4 C honey

  • 1 tsp. vanilla

  • 1/3 C nonfat vanilla Greek yogurt

  • 1/3 C coconut oil, melted

  • 1 egg

  • 1 tsp. baking soda

  • 2 Tbsp. cocoa powder

  • 1 & 2/3 C whole wheat flour (or sub with gluten free)

  • 1/3 C mini chocolate chips (or try using chopped walnuts for added protein!)

Directions

  1. Preheat oven to 375 degrees.

  2. Combine mashed banana, honey, vanilla, egg, yogurt and melted coconut oil in a large mixing bowl - blend well with a fork.

  3. Add the baking soda, cocoa powder and whole wheat flour, fold dry ingredients into wet using a large spoon until well combined.

  4. Gently fold in mini chocolate chips (optional).

  5. Line a 12 cup muffin tin with paper liners and fill each 3/4 full with batter.

  6. Bake for 15-18min (or until toothpick comes out clean).

  7. Cool for 10 minutes before serving.
