Do you love chocolate? How about baked goods? Then you are in for a real treat!
This recipe is a chocolate lovers dream, so rich and satisfying it is sure to soothe even the toughest sweet tooth... Chocolate Banana Muffins!
I've removed the white sugar, white flour and a few other odds and ends and traded up for some healthier ingredients, so you can enjoy your chocolate muffin while supporting your healthy lifestyle goals too. And in case you were wondering, yes they are totally delish'!
3 bananas, mashed
1/4 C honey
1 tsp. vanilla
1/3 C nonfat vanilla Greek yogurt
1/3 C coconut oil, melted
1 tsp. baking soda
2 Tbsp. cocoa powder
1 & 2/3 C whole wheat flour (or sub with gluten free)
1/3 C mini chocolate chips (or try using chopped walnuts for added protein!)
Preheat oven to 375 degrees.
Combine mashed banana, honey, vanilla, egg, yogurt and melted coconut oil in a large mixing bowl - blend well with a fork.
Add the baking soda, cocoa powder and whole wheat flour, fold dry ingredients into wet using a large spoon until well combined.
Gently fold in mini chocolate chips (optional).
Line a 12 cup muffin tin with paper liners and fill each 3/4 full with batter.
Bake for 15-18min (or until toothpick comes out clean).
Cool for 10 minutes before serving.
