This is a recipe I whip up fairly often, Black Bean Salad! Loaded with protein, healthy fats and complex carbs it is hard to go wrong with this flavorful "salad" (spoiler alert, it doubles as a great salsa or dip... perfect for your next tailgate party) Not only is this Mexican inspired dish nutrient dense, but it's quick and easy to throw together too. And the fresh cilantro and squeezed lime juice really add zesty flavor to this simple dish. Beef it up with some fresh sliced avocado too, pair it with your favorite multi grain chip, toss a few hearty spoonfuls on a bed of greens, or throw some in a whole wheat wrap - the possibilities are endless.
1, 15oz can whole kernel corn (look for one with no salt added)
1, 15oz. can black beans (rinsed)
1/2 avocado, diced (optional)
2-3 Tbsp. red onion, finely chopped
1 Tbsp. balsamic vinegar
1 Tbsp. olive oil
1/2 tsp. minced garlic
1/2 Lime, fresh squeezed
1 Tbsp. finely chopped cilantro
In a large mixing bowl, combine all ingredients and toss to coat well.
Place in refrigerator to marinate at least 30 minutes prior to serving.
Serve atop a small corn tortilla or pair it with multi-grain or corn tortilla chips!
