Black Bean Salad

This is a recipe I whip up often, Black Bean Salad! Loaded with protein, healthy fats and complex carbs it is hard to go wrong with this flavorful "salad" (spoiler alert, it also doubles as a great salsa or dip!) Not only is this Mexican inspired dish nutrient dense and quick and easy to throw together, but it is so tasty too! Fresh cilantro and lime really add flavor to this basic dish! Try adding fresh sliced avocado for a creamier flavor and some added healthy fats too.


  • 1, 15oz can whole kernel corn (look for one with no salt added)

  • 1, 15oz. can black beans (rinsed)

  • 1/2 avocado, diced (optional)

  • 2-3 Tbsp. red onion, finely chopped

  • 1 Tbsp. balsamic vinegar

  • 1 Tbsp. olive oil

  • 1/2 tsp. minced garlic

  • 1/2 Lime, fresh squeezed

  • 1 Tbsp. finely chopped cilantro


  1. In a large mixing bowl, combine all ingredients and toss to coat well.

  2. Place in refrigerator to marinate at least 30 minutes prior to serving.

  3. Serve atop a small corn tortilla or pair it with multi-grain or corn tortilla chips!
