Black Bean & Corn Salad

Looking for a simple side dish that doubles as a crowd-pleasing dip? This Black Bean & Corn Salad is one of my favorite go-to recipes.


Made with pantry staples like black beans, corn, and tomatoes, it's quick to throw together and packed with fiber, plant-based protein, and fresh flavor. The combination of lime, cilantro, and a light balsamic dressing gives it a bright, zesty taste that works year-round.


Enjoy it as a side dish, spoon it over a bed of greens, tuck it into a wrap, serve it alongside grilled chicken, or scoop it up with your favorite tortilla chips. For an extra boost of flavor and creaminess, try adding diced avocado just before serving.


Whether you're meal prepping for the week or need a last-minute dish for a summer gathering, this easy Black Bean & Corn Salad is always a winner.

Ingredients

  • 1 (15 oz) can whole kernel corn (look for one with no salt added), drained

  • 1 (15 oz) can black beans, rinsed and drained

  • 1 (14.5 oz) can diced tomatoes, drained

  • 2–3 Tbsp red onion, finely chopped

  • 1 Tbsp balsamic vinegar

  • 1 Tbsp olive oil

  • 1/2 tsp minced garlic

  • Juice of 1/2 lime

  • 1 Tbsp finely chopped cilantro


Optional Add-Ins

  • 1/2 avocado, diced

  • 1/2 bell pepper, diced (any color)

  • 1 jalapeño, seeded and finely chopped

  • 1/4 cup diced cucumber

  • 1/4 cup crumbled non-fat feta cheese

  • Additional cilantro, to taste

Directions

  1. In a large mixing bowl, combine all ingredients and toss to coat well.

  2. Place in refrigerator to marinate at least 30 minutes prior to serving.

  3. Serve atop a small corn tortilla or pair it with multi-grain or corn tortilla chips!
