Black Bean Salad

This is a simple recipe I whip up often: Black Bean Salad!


It's simple yet full of protein, complex carbs, making it your new eat better bestie that doubles as a fun dip!


Not only is this Mexican inspired dish nutrient dense and quick and easy to throw together in a snap, it's darn tasty too!


Boasting fresh cilantro and lime, I also like to add a bit of fresh sliced avocado for a creamier and richer flavor too! Serve it as a side, add it to a bed of greens, fold some into a wrap or serve it with your favorite multi-grain chips!


Ingredients

  • 1, 15oz can whole kernel corn (look for one with no salt added)

  • 1, 15oz. can black beans (rinsed)

  • 1/2 avocado, diced (optional)

  • 2-3 Tbsp. red onion, finely chopped

  • 1 Tbsp. balsamic vinegar

  • 1 Tbsp. olive oil

  • 1/2 tsp. minced garlic

  • 1/2 Lime, fresh squeezed

  • 1 Tbsp. finely chopped cilantro

Directions

  1. In a large mixing bowl, combine all ingredients and toss to coat well.

  2. Place in refrigerator to marinate at least 30 minutes prior to serving.

  3. Serve atop a small corn tortilla or pair it with multi-grain or corn tortilla chips!
