Black Bean Hummus Dip

Got the munchies? Not sure what to bring to the upcoming tailgate party? Looking for a healthy snack to wow family and friends? Let this week's recipe help solve your foodie dilemma! This rich and creamy Black Bean Hummus Dip puts a healthier spin on a traditional snack fav....and with just 3 flavorful ingredients! Because the ingredients are 3 staples I usually have on hand this recipe has become my go-to snack for last minute guest events or party invites. I'd say snacking "clean" just got a whole lot easier (oh and did I mention tastier too?!?!)

Ingredients

  • 1, 12-14oz. can organic diced tomatoes (no salt added)

  • 1, 15oz. can organic black beans (low salt)

  • 1 container hummus (approximately 7 oz.) *pick your favorite flavor - I like red pepper or tomato basil for some added zest!

Directions

  1. Drain and rinse beans and pour into medium size microwave safe mixing bowl.

  2. Drain and rinse diced tomatoes and add to bowl.

  3. Scoop hummus into bowl.

  4. Gently stir all ingredients together with a large spoon or spatula and place the bowl in the microwave.

  5. Warm mixture on low heat for approximately 2- 3 minutes (stirring occasionally).

  6. Remove from microwave and serve with rice crackers, whole grain pita crisps, multigrain chips, baked corn chips or some of your favorite veggies!

Tip - for a creamier dip you can add a second container of hummus or use one large container, for chunkier stick with the one standard size hummus container.
