It is no secret that I LOVE Mexican food, so I am always looking for great ways I can enjoy it more often, and this clean eats dish definitely let's me do just that! Confession: during the warm summer months, we whip this up at least once a week!
The great thing about this avocado shrimp ceviche is it can served as a side dish, dip, or a hearty meal all on its own. And it can be created in a variety of ways, from a more creamy guac style dip to a more traditional ceviche where you leave the avocado diced along with the shrimp, tomato and cucumber, for more of a Mexican salad. You can even add some fresh mango or pineapple for a bit of fun seasonal flair! YUM!
