If you've been hanging out with me long, then you know I am a BIG fan of pairing nutrient dense foods alongside your favorite fun foods. Even better when those two worlds collide!
And this Avocado Shrimp Ceviche is bursting with fresh flavor that is both nutritious and delicious! Just in time for your Cinco De Mayo celebration (or any time the craving for a tasty and fun Mexican dish strikes!) comes this simple and satisfying recipe.
I must admit that our household whips up a batch of this tasty "dip" at least twice a month to enjoy. It's also hands down my most requested dish to have on hand when hosting events, and I often get asked to bring it along when attending family events too! Yep, it's THAT good.
Serve as a chip or veggie dip or as a main entree over crispy tostado shells, brown rice or leafy greens.
To make your ceviche a more creamy style (as our household loves) simply mash the avocado and mix in the chopped ingredients, and if you prefer yours as the more traditional chopped salad, simply leave the avocado cubed.
10-12 cilantro lime shrimp, sliced (get the recipe for cilantro lime shrimp here)
2 avocados, cubed
1/3 cucumber, sliced and cubed
Juice of 1/2 lime
1/2 tsp. white vinegar
2 Tbsp. red onion, diced
1-2 Tbsp. fresh cilantro, finely chopped
Slice 10-12 cilantro lime shrimp into bit size chunks and add to a medium size mixing bowl.
Half each avocado, remove the pit and slice each half lengthwise then crosswise to cube into quarter chunk and add to the bowl.
Slice cucumber by 1/2" circles, then quarter each and add them the bowl.
Add diced red onion, chopped cilantro, juice of 1/2 lime and vinegar to the bowl. Stir gently to combine.
Enjoy it plain, with your favorite corn or multi grain chips, or as a spread on your next wrap - the possibilities are deliciously endless!
Have leftovers? Store them in an airtight container in the fridge for the next day!
