Get ready to nail the healthy side dish conundrum with a batch of delicious Avocado Shrimp Ceviche! Complete with healthy fats, complex carbs, protein and vitamins and minerals you can feel good about this party favorite. It is no secret that I LOVE Mexican food, so I am always looking goer ways I can enjoy it more often, and this clean eats dish definitely let's me do just that!
The great thing about this type of side dish is it can be made in a variety of different ways - try mashing the avocado for a creamy guacamole feel, or keep the ingredients diced and gently toss for more of a chunky salad, play with flavor by adding some fresh seasonal fruit, and more! And it's not just a side dish or dip, try adding some to your next wrap or flatbread for a fun and flavorful kick!
10-12 cilantro lime shrimp, sliced (get the recipe for cilantro lime shrimp here)
2 avocados, cubed
1/3 cucumber, sliced and cubed
Juice of 1/2 lime
1/2 tsp. white vinegar
2 Tbsp. red onion, diced
1-2 Tbsp. fresh cilantro, finely chopped
Slice 10-12 cilantro lime shrimp into bit size chunks and add to a medium size mixing bowl.
Half each avocado, remove the pit and slice each half lengthwise then crosswise to cube into quarter chunk and add to the bowl.
Slice cucumber by 1/2" circles, then quarter each and add them the bowl.
Add diced red onion, chopped cilantro, juice of 1/2 lime and vinegar to the bowl. Stir gently to combine.
Enjoy it plain, with your favorite corn or multi grain chips, or as a spread on your next wrap - the possibilities are deliciously endless!
