Avocado Shrimp Ceviche

If you love a recipe that feels a little fun and delivers on flavor, this Avocado Shrimp Ceviche is one you’ll want to keep on repeat.


It’s fresh, flavorful, and packed with nutrient-dense ingredients like shrimp, avocado, and citrus—making it a great option for supporting protein intake, healthy fats, and overall balance.


This is one of those recipes we make on repeat in our house (at least a couple times a month), and it’s always a hit when entertaining. In fact, it’s easily one of the most requested dishes I get asked to bring to gatherings.


Serve it as a dip with multigrain chips or jicama sticks, spoon it over tostadas, or add it to a bowl or salad for a simple, satisfying meal.


Traditional ceviche is typically served more like a chunky salad, but you can also mash the avocado for a creamier texture—both options are equally delicious.

Avocado Shrimp Ceviche

Ingredients

  • 10-12 cilantro lime shrimp, sliced (get the recipe for cilantro lime shrimp here)

  • 2 avocados, cubed

  • 1/3 cucumber, peeled, sliced and cubed

  • Juice of 1/2 lime

  • 1/2 tsp. white vinegar

  • 2 Tbsp. red onion, diced

  • 1-2 Tbsp. fresh cilantro, finely chopped

Directions

Cilantro Lime marinade
  1. Slice 10-12 cilantro lime shrimp into bit size chunks and add to a medium size mixing bowl.

  2. Half each avocado, remove the pit and slice each half lengthwise then crosswise to cube into quarter chunk and add to the bowl.

  3. Peel the cucumber and slice cucumber by 1/2" circles, then quarter each and add them the bowl.

  4. Add diced red onion, chopped cilantro, juice of 1/2 lime and vinegar to the bowl. Stir gently to combine.

  5. Enjoy it plain, with your favorite corn or multi grain chips, or as a spread on your next wrap - the possibilities are deliciously endless!

  6. Have leftovers? Store them in an airtight container in the fridge for the next day!


Pro Tip - mix up the flavors of this tasty recipe by adding some fresh diced pineapple or mango! Talk about a fun flavor kick!
