Looking for a sweet treat you can enjoy on a warm summer day?
It's a great time of year to stop by your local farmer's market, pick up some fresh strawberries and whip up a batch of Strawberry Yogurt Bark!
Loaded with protein, calcium, vitamin C, and antioxidants, strawberry bark is delicious and nutritious.
Such a simple recipe you can easily get creative by making all types of fruit inspired bark, adding a variety of nuts and even a bit of spice!
3 C whole-milk or low-fat plain Greek yogurt
1/4 C pure maple syrup or honey
1 tsp. vanilla
1 & 1/2 C strawberries, sliced
1/4 C mini chocolate chips (or carob chips)
Rinse and pat dry the strawberries, then slice each lengthwise.
Pour the yogurt in a medium size mixing bowl, add honey and vanilla to blend well.
Gently fold the sliced strawberries into the yogurt mixture and coat well.
Evenly spread the yogurt mixture onto a parchment lined baking sheet.
Place the baking sheet into the freezer approximately 1 hour (until solid).
Remove the baking sheet from the freezer and break frozen bark into pieces.
Store pieces in an airtight container in the fridge for up to one week.
