Strawberry Yogurt Bark

Looking for a sweet treat you can enjoy on a warm summer day?


It's a great time of year to stop by your local farmer's market, pick up some fresh strawberries and whip up a batch of Strawberry Yogurt Bark!


Loaded with protein, calcium, vitamin C, and antioxidants, strawberry bark is delicious and nutritious.


Such a simple recipe you can easily get creative by making all types of fruit inspired bark, adding a variety of nuts and even a bit of spice!


Strawberry Yogurt Bark



Ingredients

  • 3 C whole-milk or low-fat plain Greek yogurt

  • 1/4 C pure maple syrup or honey

  • 1 tsp. vanilla

  • 1 & 1/2 C strawberries, sliced

  • 1/4 C mini chocolate chips (or carob chips)



Directions

  1. Rinse and pat dry the strawberries, then slice each lengthwise.

  2. Pour the yogurt in a medium size mixing bowl, add honey and vanilla to blend well.

  3. Gently fold the sliced strawberries into the yogurt mixture and coat well.

  4. Evenly spread the yogurt mixture onto a parchment lined baking sheet.

  5. Place the baking sheet into the freezer approximately 1 hour (until solid).

  6. Remove the baking sheet from the freezer and break frozen bark into pieces.

  7. Store pieces in an airtight container in the fridge for up to one week.
