Quick and Easy Pumpkin Bread

Do you love a fun seasonal bread? How about one you can whip up in a flash? And what if it supported your eat better goals too? Well, look no further!


This Quick and Easy Pumpkin Bread will surely do the trick!


Nice and moist it boasts all the yumminess of traditional pumpkin bread with some healthy goodness sneaked in too and plenty of seasonal spices to tantalize the senses!


And it only takes about 10-15 minutes to make, then pop it in the oven for an hour while you knock out a few of those important items on your to-do list and let the fabulous aroma fill your home. Oh my YUM!

Ingredients

  • 1 C pumpkin puree

  • 2 eggs

  • 1/2 C honey

  • 1/3 C coconut oil, melted

  • 1/4 C water

  • 1 tsp. vanilla extract

  • 1 tsp. baking soda

  • 1/2 tsp. cinnamon

  • 1 & 1/2 tsp. pumpkin spice blend

  • 1 & 3/4 C whole wheat flour (or sub with gluten free)




Directions

  1. Preheat oven to 325 degrees.

  2. Grease a 9x5 loaf pan lightly with coconut or olive oil spray.

  3. In a large mixing bowl, blend the eggs, honey, and melted coconut oil (zap in the microwave about 30 seconds to melt) using a whisk.

  4. Add the pumpkin puree, water, and vanilla and blend with whisk.

  5. Next stir in the baking soda, cinnamon, and pumpkin pie spice with a spoon.

  6. Lastly, add the flour, blending all ingredients with a spoon (it’s okay if batter is not perfectly smooth.)

  7. Pour the batter into the loaf pan and place it in the oven to bake fro 50-60 minutes (until toothpick removes cleanly from center of the loaf).

  8. Remove bread from oven and cool on a rack for 10-15 minutes before removing from the loaf pan.

  9. Serve and Enjoy!
