Peanut Butter Cookies

Who says a cookie can't be tasty and good for you too? I don't know about you but just because I choose a healthy lifestyle does not mean I want to sacrifice some of my favorite treats, and that includes warm and ooey gooey fresh out of the oven melt in your mouth cookies!

That's just one of the reasons I love with these Peanut Butter Cookies! By removing all the unhealthy (and unnecessary) ingredients, you're left with their pure moist, rich and creamy goodness. And yep, they're healthy! Even better, with just 4 ingredients these cookies are not only easy tasty but easy to whip up in a flash too! Perfect for a mid-day energy pick me up, pre or post workout fuel, or an anytime treat.


  • 1 C creamy or crunchy natural peanut butter

  • 1/2 C honey

  • 1 egg

  • 1 tsp. vanilla


Peanut Butter Cookies
  1. Preheat the oven to 350 degrees.

  2. Place peanut butter in medium size bowl and microwave approximately 30 seconds on medium-high heat (until easily stirred).

  3. Add honey and vanilla and stir well.

  4. In a small bowl lightly beat the egg with a fork, whisk or hand mixer, stir into peanut butter mixture until well combined.

  5. Use a cookie scoop to place 1-2 Tbsp. of dough onto a baking sheet (I prefer a cookie scoop for this due to the texture of the batter, but you can also use a large spoon), flatten each ball slightly.

  6. Bake 12-15 minutes (until the edges turn a light golden brown), remove from oven and while cookies are still warm use a fork to create the criss cross pattern on top.

  7. Cool cookies 2 or so minutes on baking sheet before transferring to a cooling rack.
