Peanut Butter Cookies

Who says cookies can't be healthy and taste great? Why not have your cookie and eat it too?? Good news, with these Peanut Butter Cookies you can! That's because we've removed all the unhealthy ingredients and stripped them back to their healthy and tasty basics, so all you're left with is moist, rich, and creamy flavor. And with just 4 ingredients these cookies are not only easy to make, but a time and budget saver too! Perfect for a mid-day energy pick me up, pre or post workout fuel, or an anytime "treat" the whole family can enjoy!

Ingredients

  • 1 C creamy or crunchy natural peanut butter

  • 1/2 C honey

  • 1 egg

  • 1 tsp. vanilla

Directions

  1. Preheat the oven to 350 degrees.

  2. Place peanut butter in medium size bowl and microwave approximately 30 seconds (until easily stirred).

  3. Add honey and vanilla and stir well.

  4. In a small bowl lightly beat the egg with a fork, whisk or hand mixer, stir into peanut butter mixture until well combined.

  5. Use a cookie scoop to place 1-2Tbsp. of dough onto a baking sheet (I prefer a cookie scoop for this due to the texture of the batter, but you can also use a large spoon), flatten each ball slightly.

  6. Bake 12-15min (until the edges turn a light golden brown), remove from oven and while cookies are still warm use a fork to create the criss cross pattern on top.

  7. Allow cookies to cool 2 or so minutes on sheet before transferring to a cooling rack.
