Gingerbread Brownie Bites

This brownie recipe might just become your new favorite pairing with a cozy holiday morning coffee.


I’ll admit—I have quite a few brownie recipes in my collection (from pumpkin to sweet potato and everything in between). But during the holiday season, it’s always fun to mix things up with a little seasonal flavor.


That’s exactly where these Gingerbread Brownie Bites come in.


They bring together that rich, chocolatey texture you love with the warm, spiced flavors of gingerbread for a festive twist that feels both indulgent and satisfying.


And like all of my recipes, they’re built with a more balanced approach—so you can enjoy them as part of real life, not feel like you’ve overdone it.


Perfect for holiday mornings, gatherings, or a simple treat with your coffee.



Ingredients

  • 1/2 C unsweetened applesauce

  • 1/2 C pumpkin puree

  • 3/4 C creamy peanut butter (or other nut butter)

  • 1 Tbsp. molasses

  • 3 Tbsp. honey

  • 1 tsp. vanilla

  • 1 tsp. baking soda

  • 2 Tbsp. cocoa powder

  • 2 tsp. cinnamon

  • 3 tsp. ginger, ground

  • 1/4 tsp. cloves, ground

  • 1/8 tsp. nutmeg

  • 1/3 C mini chocolate chips (or carob chips)

Directions

  1. Preheat oven to 350 degrees.

  2. Warm creamy peanut butter (or nut butter of choice) on low for 20-30seconds in the microwave.

  3. Add applesauce, pumpkin, molasses, honey and vanilla in a large mixing bowl.

  4. Add warmed nut butter and stir well (by hand).

  5. Add cocoa powder, cinnamon, ginger, cloves, nutmeg, and baking soda. Stir well.

  6. Fold in mini chocolate chips and spread batter into a lightly coated 8x8 baking dish (I like to use a spritz of olive or coconut oil spray).

  7. Bake for approximately 30min (or until toothpick comes out clean).

  8. Cool for 10-15 minutes before cutting into squares and serving.
