Chocolate Haystack Cookies

Calling all chocolate lovers!!
This week I share with you one of my FAVORITE chocolate recipes: Chocolate Haystack Cookies!
They're so rich and creamy it's hard to believe they are actually loaded with heart healthy ingredients too! Who knew eating better could taste so good?!
Such a quick and simple recipe to whip up, with a list of ingredients you probably already have on hand, so you can easily satisfy your sweet tooth in no time flat. I like to put half the batch in the freezer so I always have some ready on hand!

Ingredients
3/4 C honey
2/3 C creamy peanut butter
1/2 C coconut oil
1/3 C unsweetened cocoa
1 & 1/2 tsp. vanilla
3 C oats (can use gluten free)
Directions
Place a medium size saucepan on stovetop over low to medium heat.
Add peanut butter, coconut oil, honey and vanilla and stir well until well creamed together.
Add cocoa and stir to blend well.
Remove saucepan from heat and add oats, 1 C at a time, stirring until well combined.
Drop by large spoonful onto a wax paper lined baking sheet.
Place baking sheet in freezer for 20 minutes.
Remove cookies from baking sheet and store in a large ziplock or airtight container in the fridge up to one week.
