Calling all chocolate lovers!! I have a great "clean eats" treat to share with you this week! These Chocolate Haystack Cookies are so rich and creamy it's hard to believe they are actually loaded with heart healthy ingredients too! A sweet, rich and creamy cookie that says "indulge" delivering lean proteins, healthy fats and complex carbs - who knew it was possible? Yes, eating healthy can taste great too! So quick and simple to whip up, with a list of ingredients you probably already have on hand, a treat you can feel good about sharing with family and friends, and a delicious way to satisfy your next sweet tooth craving without compromising your healthy lifestyle goals...what's not to love?
2/3 C natural creamy peanut butter
3/4 C honey
1/2 C coconut oil
1/3 C unsweetened cocoa
1 & 1/2 tsp. vanilla
3 C oats (can use gluten free)
Place a medium size saucepan on stovetop over low to medium heat.
Add creamy natural peanut butter, honey, coconut oil and vanilla and stir well until well creamed together.
Add cocoa and mix well.
Remove saucepan from heat and add oats, 1 C at a time, stirring until well combined.
Drop by large spoonful onto a wax paper lined baking sheet.
Place baking sheet in freezer for 20 minutes.
Remove cookies from baking sheet and store in a large ziplock or airtight container in the fridge up to one week.
