Calling for just a handful of ingredients you can whip it up in a flash! Hearty and flavorful, its delicious aroma will fill your kitchen and have your mouth watering. And bonus: a blender recipe makes prep and clean a snap!
This is a great starter recipe whether you're looking to kickstart healthier eating, a busy go-getter with little time to spare on meal prep, or a vegetarian/vegan who is looking to put a fresh spin on mealtime. And loaded with carrots, apple, and one of our healthy spice favorites ginger, you're going to reap all sorts of healthy benefits too.
Simplify meal prep, one tasty spoonful at a time!
1.5 lbs. carrots (about 5 C peeled and chopped)
1 large apple (peeled and chopped)
1 small yellow onion, diced
4 C vegetable broth, low sodium
2 Tbsp. fresh ginger, grated
1 Tbsp. olive oil
1/2 tsp. nutmeg
1/4 tsp. cinnamon
Add 1 Tbsp. olive oil and diced onion to a large pot, stir frequently over medium heat until onion is translucent (approximately 5 minutes).
Add ginger and cook for a few more minutes before adding the vegetable broth.
Add chopped carrot and apple to the pot and bring to a boil, reduce heat and let simmer for 20 minutes.
Transfer mixture to a blender and add nutmeg (I used a vitamix, but a standard blender will work well too) transfer and blend a few cups at a time to blend until evenly smooth. Tip - be cautious of filling the pitcher too high with the heated mixture as it can cause the top to blow off the top!
Once blended it is ready to enjoy right away! This soup also freezes well, making it a perfect prepare ahead meal.
