This simple blender recipe will warm you on a crisp afternoon or evening and supply some essential vitamins and minerals too, Carrot Apple Ginger Soup! A nice and simple soup you can whip up in a flash, calling for just a handful of ingredients its hearty and flavorful aroma will fill your kitchen, and bonus - prep and clean up are a snap! This is a great go-to recipe for especially busy days when you need something quick but don't want to skimp on nutrients or flavor. Blender soup recipes are such a time saver. I often use them to batch make soups for quick and convenient freezer meals, saving me valuable meal planning and food prep time.
1.5 lbs. carrots (about 5 C peeled and chopped)
1 large apple (peeled and chopped)
1 small yellow onion, diced
4 C vegetable broth, low sodium
2 Tbsp. fresh ginger, grated
1 Tbsp. olive oil
1/2 tsp. nutmeg
1/4 tsp. cinnamon
Add 1 Tbsp. olive oil and diced onion to a large pot, stir frequently over medium heat until onion is translucent (approximately 5 minutes).
Add ginger and cook for a few more minutes before adding the vegetable broth.
Add chopped carrot and apple to the pot and bring to a boil, reduce heat and let simmer for 20 minutes.
Transfer mixture to a blender and add nutmeg (I used a vitamix, but a standard blender will work well too) transfer and blend a few cups at a time to blend until evenly smooth. Be cautious of filling the pitcher too high with the heated mixture as it can cause the top to blow the lid off.
Once blended it is ready to enjoy right away!
Tip: whip up a batch and keep it in the freezer to have on hand for especially busy weeks!
