Grilled Salmon Asparagus

Get ready to enjoy a deliciously fresh & healthy meal, loaded with essential vitamins and minerals, all in under 30 minutes!


Eating heart healthy just got a whole lot easier with this simple recipe, Baked Salmon Asparagus!


Aluminum foil packets offer a great alternative to traditional grilling or baking methods, enabling you to lock in all the flavor while marinating your meat dish throughout the cooking process, so your meat stays nice and moist, all while making clean up a snap!

Partnered with asparagus which is loaded with vitamin K, folate, and copper you have a winning combination - in both flavor and nutrition. And bonus - if you're watching your sugar intakes, each of these foods are low on the glycemic index!


Ingredients

  • 2 salmon fillets (approximately 6oz. each, preferably skinless)

  • 1/2 lb. asparagus

  • 1 & 1/2 Tbsp. olive oil

  • 1 garlic clove, (or 1 tsp. minced garlic)

  • 1 lemon, sliced

  • 1/2 tsp. fresh dill, thyme, or rosemary (to taste)

Directions

  1. Preheat oven to 400 degrees.

  2. Cut 2 sheets of aluminum foil for grilling (or baking) packets.

  3. Divide asparagus into 2 portions, layer each bundle down the center of your foil packets.

  4. Combine the olive oil and minced garlic in a small bowl.

  5. Lightly top each asparagus bundle with 1 tsp. of the oil and garlic mixture.

  6. Rinse salmon fillets and lay each fillet over the bed of asparagus in your foil packet.

  7. Top each salmon fillet with the remaining olive oil and garlic mixture.

  8. Sprinkle fresh dill, rosemary or thyme atop each fillet (approximately 1/4 tsp. on each fillet)

  9. Top with lemon slices and close each packet, sealing with a bit of room for baking.

  10. Place pouches directly on the grill (or bake in the oven on the middle rack) for 20-30 minutes. Tip - fish is ready to enjoy when it has turned a nice dark pink and flakes easily when pierced with a fork.
