Do you love the smell of fresh baked apple and cinnamon? How about a baked good with fresh chunks of fruit baked right in? A moist cake like cookie with a crisp baked outer edge? Yes please! But how can you still enjoy this kind of delectable treat while supporting your health and fitness goals? When you utilize a clean eats recipe that smells, looks and tastes so good you'll forget your actually eating clean! Thank goodness for this week's Apple Cinnamon Cookies! Made with hearty grains, fresh baked apple and sweet and spicy cinnamon this is a cookie you can feel good about. I may not always crave something sweet or a fresh baked cookie, but when I do I am sure glad I have these delicious numbers in my recipe box!
1 C oats
3/4 C whole wheat flour (or gluten free substitute)
2 tsp. cinnamon
1 tsp. baking powder
1/4 tsp. ground nutmeg
1/4 tsp. allspice
2 Tbsp. coconut oil, melted
1 tsp. vanilla
1/2 C honey (or maple syrup)
1 large apple, chopped (my favorite is honeycrisp!)
Preheat oven to 350 degrees.
In a medium size mixing bowl combine all dry ingredients and blend with a spoon.
In a small size mixing bowl combine all wet ingredients except the apple, whisk with a fork until well combined.
Add wet ingredients to dry ingredients and stir well.
Fold in chopped apple, gently stirring with a spoon.
Spoon dough balls onto a baking sheet and flatten to about 1/2" thick.
Bake in the oven approximately 15minutes, or until the edges turn a light golden brown.
Remove from the oven and place on a cooling rack for 5-10 minutes.
