Apple Cinnamon Cookies

These Apple Cinnamon Cookies bring together everything you love about that classic combination—soft, moist centers with fresh apple baked right in, and a lightly crisp edge for the perfect texture.
Made with hearty grains, fresh fruit, and warm spices, they’re a great example of how you can enjoy baked goods while still supporting a more balanced approach to eating.

Perfect for a snack, a simple treat, or something to enjoy with your coffee, these cookies deliver on both flavor and function.

Ingredients
1 C oats
3/4 C whole wheat flour (or gluten free substitute)
2 tsp. cinnamon
1 tsp. baking powder
1/4 tsp. ground nutmeg
1/4 tsp. allspice
1 egg
2 Tbsp. coconut oil, melted
1 tsp. vanilla
1/2 C honey (or maple syrup)
1 large apple, chopped

Directions
Preheat oven to 350 degrees.
In a medium size mixing bowl combine all dry ingredients and blend with a spoon.
In a small size mixing bowl combine all wet ingredients except the apple, whisk with a fork until well combined.
Add wet ingredients to dry ingredients and stir well.
Fold in chopped apple, gently stirring with a spoon.
Spoon dough balls onto a baking sheet and flatten to about 1/2" thick.
Bake in the oven approximately 15minutes, or until the edges turn a light golden brown.
Remove from the oven and cool on a baking rack.
