Simple Summer BBQ Chicken Skewers

These BBQ Chicken Skewers are flavorful, easy to prep, and perfect for everything from casual weeknight dinners to backyard cookouts with friends and family.

Simple Summer BBQ Chicken Skewers

Ingredients:


  • 1½ lbs boneless, skinless chicken breast, cut into 1.5-inch cubes

  • 1 red bell pepper, chopped into chunks (or orange, yellow, green - choose your favorite or use several!)

  • 1 zucchini, sliced into thick rounds

  • ½ red onion, cut into chunks

  • 2 Tbsp. olive oil

  • 2 tsp. lemon juice or red wine vinegar

  • 2 cloves garlic, minced

  • 1 tsp. dried oregano or Italian seasoning

  • Salt & pepper to taste

  • Wooden or metal skewers

Directions:


  1. Soak your skewers: If you’re using wooden skewers, soak them in water for 20–30 minutes to prevent burning.

  2. Marinate the chicken: In a large bowl, mix olive oil, lemon juice (or vinegar), garlic, oregano, salt, and pepper. Add the chicken cubes and toss to coat. Marinate for at least 30 minutes (or up to 4 hours in the fridge).

  3. Assemble the skewers: Alternate pieces of marinated chicken, bell pepper, zucchini, and onion on each skewer. Leave a little space between pieces so everything cooks evenly.

  4. Grill it up: Preheat your grill to medium-high. Place skewers directly on the grill grates and cook for 10–12 minutes, turning occasionally, until chicken is cooked through and has nice grill marks.

  5. Serve & enjoy: Enjoy with your favorite summer sides like corn on the cob, grilled pineapple, or a simple leafy green salad.
