Simple Summer BBQ Chicken Skewers

When the sun’s shining and the grill’s hot, there’s nothing better than a simple, healthy BBQ recipe that brings people together. And let me tell you, these BBQ Chicken Skewers hit every note. They’re flavorful, easy to prep, and perfect for backyard cookouts, casual dinners, or weekend gatherings with friends and family.
One of the best parts? You can customize them based on what you have on hand. These skewers are packed with lean protein and colorful veggies — plus they look as good as they taste.
Whether you're aiming to eat a bit lighter this summer or just want a no-fuss recipe that still delivers major flavor, these chicken skewers are for you.

Ingredients:
1½ lbs boneless, skinless chicken breast, cut into 1.5-inch cubes
1 red bell pepper, chopped into chunks (or orange, yellow, green - choose your favorite or use several!)
1 zucchini, sliced into thick rounds
½ red onion, cut into chunks
2 Tbsp. olive oil
2 tsp. lemon juice or red wine vinegar
2 cloves garlic, minced
1 tsp. dried oregano or Italian seasoning
Salt & pepper to taste
Wooden or metal skewers

Directions:
Soak your skewers: If you’re using wooden skewers, soak them in water for 20–30 minutes to prevent burning.
Marinate the chicken: In a large bowl, mix olive oil, lemon juice (or vinegar), garlic, oregano, salt, and pepper. Add the chicken cubes and toss to coat. Marinate for at least 30 minutes (or up to 4 hours in the fridge).
Assemble the skewers: Alternate pieces of marinated chicken, bell pepper, zucchini, and onion on each skewer. Leave a little space between pieces so everything cooks evenly.
Grill it up: Preheat your grill to medium-high. Place skewers directly on the grill grates and cook for 10–12 minutes, turning occasionally, until chicken is cooked through and has nice grill marks.
Serve & enjoy: Enjoy with your favorite summer sides like corn on the cob, grilled pineapple, or a simple leafy green salad.
