Think healthy eating means you have to sacrifice flavor and those treats you enjoy most? No way! Simply delicious are these Skinny Chocolate Chip Banana Cookies! With just six ingredients you likely have on hand, you can have your cookie and eat it too... guilt free! The recipe uses bananas and applesauce in place of traditional oils and butter, offering a delicious way to reduce empty calories while keeping a rich, moist and creamy flavor. Also a great cookie recipe for our vegan friends as it is egg free and if you have a nut allergy, it is also nut free. Enjoy!
3 ripe bananas, mashed
2 C rolled oats (can use gluten free)
1/3 C unsweetened applesauce
1 tsp. vanilla
1/2 tsp. cinnamon
1/2 -1 C chocolate chips (or carob chips)
Preheat oven to 350 degrees.
Mash bananas, stir in oats, carob chips, vanilla, and applesauce. Stir well.
Allow dough to sit for 15 minutes.
Drop dough by spoonful onto cookie sheet and bake approximately 20 minutes (or until lightly browned).
Remove from oven and place cookies on a cooling rack for 5-10 minutes before serving.
Tip - in place of chocolate chips you can substitute chopped walnuts, chopped figs, raisins, dried cranberries or chocolate chips. With endless possibilities you can easily add variety and play with flavor!
