Chocolate Peanut Butter Oatmeal Bars

Yes, Chocolate and Peanut butter, it's a winning combination! Add some hearty oats and you have yourself a delicious and satisfying little bar!

That's what these Chocolate Peanut Butter Oatmeal Bars are all about!

And bonus - because this recipe yields a big batch, you can share it with friends and family or just freeze half the batch to pull out and enjoy whenever you want them!

Ingredients

  • 1 C creamy natural peanut butter (or nut butter sub)

  • 2 large ripe bananas, mashed

  • 1 egg

  • 1/3 C honey

  • 1/4 C coconut oil, melted

  • 1 tsp. baking powder

  • 3 1/2 C rolled oats (can sub with gluten free)

  • 1/2 C mini chocolate chips (or carob chips)

Directions

  1. Preheat oven to 350 degrees.

  2. Mash bananas and set aside in a large mixing bowl.

  3. In a small bowl melt 1 C peanut butter with 1/4 C coconut oil in microwave for approximately 30 seconds, stir well and add to mashed bananas.

  4. Add egg, baking powder and honey, blend on low with a hand mixer.

  5. Stir oats and chocolate chips into batter by hand.

  6. Spread batter into a lightly greased 9x13 baking dish (I like to spray a bit of coconut oil to coat).

  7. Bake for 20-25 minutes (until toothpick come out clean), remove from oven and cool for 10 minutes before slicing.
